After releasing the pressure from the Instant Pot (10 minutes of natural release before quick releasing), the gravy will still be quite hot and thin. Make sure the pork chops are covered before sealing the cooker and setting it to 10 minutes of high pressure. After the onions are golden, add some broth to the cooker and return the pork chops to the Instant Pot. Make sure the heat is stable before adding the pork chops. Somewhere around 400F seems to work best, though the grill may fluctuate. Heat up your gas grill to a temperature between 350-450 degrees F. You can technically caramelize onions under pressure, but that technique requires more time than we want to spend on a quick weeknight dinner. Season with salt, pepper, and garlic powder. Pour the beer mix over the pork chops and cover. Add garlic, onion, mushrooms, bay leaves and thyme. This is optional, but I like to brush 1 tablespoon of cooking oil onto the skillet prior to frying. While the pork chops rest, quickly brown some onions in the Instant Pot with the sautГ© function. Turn on the electric skillet to high heat (400F) brown chops on both sides. Use the sautГ© function to brown the onions.Use the potвЂ™s sautГ© setting to melt some butter and brown the chops two at a time. Sear on one side, do not move them at all. Just because we canвЂ™t have crispy pork chops in the Instant Pot doesnвЂ™t mean that we canвЂ™t get some caramelized flavors from them. Do not put your chops in early as the reason for the sear is to seal in the juices and keep the pork chop moist. You could pretty much use any pork chops for this recipe, but boneless loin chops give you two advantages: The first is thereвЂ™s no bone to work around, and the second is that loin chops are generally more tender and quick-cooking than other pork chops.
